Description
A comforting, quick 5pm fix that combines black tea, warming spices, and creamy pumpkin puree for a cozy, homemade chai latte in under 10 minutes.

- 2 black tea bags (or 2 tsp loose leaf Assam or English Breakfast)
- 1 cup water
- 1 cup milk (whole, oat, almond, or coconut)
- 3 tbsp (45g) 100% pure pumpkin puree
- 1 tsp chai spice blend (or 1/2 tsp cinnamon, 1/4 tsp ginger, 1/4 tsp cardamom, 1/8 tsp cloves)
- 1–2 tbsp maple syrup
- 1/2 tsp vanilla extract
- Whipped cream and cinnamon for topping (optional)
Instructions
- Fill a small saucepan with 1 cup of water and bring to a boil.
- Turn off the heat, add the black tea bags, and steep for 3 minutes. Remove and discard the tea bags.
- Turn heat to medium-low and pour in the milk. Warm gently until small bubbles form around the edges (do not boil).
- Add the pumpkin puree, chai spice blend, and vanilla extract to the warm milk.
- Whisk vigorously for 1-2 minutes until the mixture is completely smooth and homogenous with no lumps.
- Remove from heat and stir in maple syrup to taste.
- Pour into a mug and top with whipped cream and a dusting of cinnamon if desired. Serve immediately.
Notes
Ensure pumpkin puree is at room temperature to prevent seizing. Do not use pumpkin pie filling. This recipe is best made fresh as the texture may separate if stored. For a decaf version, skip the tea bags and add extra spices.
