  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 cup grated parmesan cheese (from a block)
  • 1/2 teaspoon kosher salt (plus more for salting)
  • 1/4 teaspoon black pepper

Instructions

  1. Slice the zucchini into rounds about 1/8-inch thick using a mandoline or sharp knife for uniformity.
  2. Place slices in a single layer on a cutting board or plate and sprinkle generously with kosher salt. Let sit for 20 minutes to draw out moisture.
  3. Rinse the salt off the zucchini under cold water and pat them extremely dry using several layers of paper towels. Press firmly to remove as much water as possible.
  4. In a large bowl, toss the dried zucchini slices with olive oil, garlic powder, smoked paprika, grated parmesan, black pepper, and a little salt until evenly coated.
  5. Preheat the air fryer to 375°F (190°C).
  6. Arrange the zucchini slices in a single layer in the air fryer basket, ensuring they do not overlap. Cook in batches if necessary.
  7. Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy at the edges.
  8. Remove from the air fryer and place on a wire rack or paper towel-lined plate to cool slightly before serving immediately.

Notes

The key to crispiness is removing as much moisture as possible from the zucchini before cooking. Use block parmesan rather than pre-grated, as pre-grated cheese contains anti-caking agents that prevent proper crisping. Do not overcrowd the air fryer basket, or the chips will steam instead of crisp. Serve immediately as they lose crunch if stored in a closed container.
