- 3 tablespoons white miso paste
- 2 tablespoons honey (or maple syrup for vegan)
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon fresh ginger, grated
- 1 clove garlic, minced
- 1.5 pounds cod fillets (about 1-inch thick)
- 1 tablespoon neutral oil (for greasing)
- Pinch of black pepper
- Optional garnish: toasted sesame seeds, sliced green onions, chili flakes
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper and lightly brush with oil or spray with non-stick spray.
- In a small bowl, whisk together white miso paste, honey, rice vinegar, sesame oil, minced garlic, and grated ginger until smooth. If too stiff, add a teaspoon of water.
- Pat cod fillets dry with paper towels and place them on the prepared baking sheet. Season lightly with black pepper (do not add salt as miso is salty).
- Generously brush the miso glaze over the top of each fillet. Save any leftover glaze for basting or dipping.
- Bake for 12-15 minutes, or until the fish flakes easily with a fork and is opaque throughout. If the glaze browns too quickly, tent loosely with foil.
- Optional: Switch oven to broil for the last 1-2 minutes for a charred top, watching closely to prevent burning.
- Remove from oven, garnish with toasted sesame seeds and sliced green onions if desired, and serve immediately.
Notes
Pat the fish dry thoroughly before glazing to ensure the sauce sticks. White miso is preferred over red miso for its milder, sweeter flavor. If using frozen cod, ensure it is completely thawed and patted very dry. Miso and honey burn easily, so watch the fish closely during the last few minutes of cooking.
