Description

Ingredients

  • 1 lb (450g) 80/20 ground beef
  • 1 small yellow onion, finely diced (150g)
  • 12 slider buns or Hawaiian sweet dinner rolls
  • 12 slices cheddar cheese
  • 68 strips thick-cut bacon (150g)
  • 3 tbsp slider sauce (or mix of 2 tbsp mayo and 1 tbsp ketchup)
  • 1/4 cup diced pickles (30g)
  • 2 tbsp butter, melted
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Slice the 12 rolls horizontally to create top and bottom halves, keeping them connected or arranged in a 9×13 inch baking dish.
  3. Heat a skillet over medium-high heat. Add ground beef and diced onion. Break beef into small crumbles and cook until no longer pink and onions are soft (6-8 minutes).
  4. Drain excess fat if necessary, leaving a little for flavor. Season with salt and pepper. Remove from heat.
  5. In the same skillet or a separate pan, cook bacon until crispy. Chop into small pieces if using thick-cut bacon. Set aside.
  6. Spread a thin layer of the beef mixture on the bottom halves of the buns.
  7. Top each with a slice of cheddar cheese, a few pieces of bacon, and a pinch of diced pickles.
  8. Drizzle slider sauce over each slider.
  9. Place the top halves of the buns on the cheese to close the sliders.
  10. Brush the tops of all sliders with melted butter.
  11. Cover the baking dish tightly with aluminum foil.
  12. Bake covered for 10 minutes.
  13. Remove foil and bake for another 5 minutes, or until cheese is melted and buns are golden brown.
  14. Serve hot.

Notes

For a vegetarian version, substitute ground beef with rinsed black beans. To freeze, assemble sliders without baking, wrap tightly in plastic and foil, and freeze for up to 3 months. Reheat from frozen by adding 5-10 minutes to baking time. If using ground turkey, add a tablespoon of olive oil to prevent drying out.
