A simple, delicious, and affordable side dish featuring grilled peaches, spring mix, feta cheese, and a light vinaigrette. Ready in just 15 minutes, this naturally gluten-free salad is perfect for Labor Day barbecues.

- 4 medium ripe peaches (600g), halved and pitted
- 6 cups spring mix greens (180g)
- ½ cup crumbled feta cheese (75g)
- 2 tablespoons honey
- 1 tablespoon red wine vinegar
- 1 tablespoon extra virgin olive oil
- ½ teaspoon black pepper
- ¼ teaspoon salt
Instructions
- Wash peaches, cut in half, and remove pits. Cut into quarters if large.
- Preheat grill to medium-high heat (approx. 400°F / 200°C).
- Place peach halves cut-side down on the grill. Do not move for 2 minutes to get grill marks.
- Flip peaches, brush cut side with honey, and grill for another 2-3 minutes until honey bubbles and caramelizes.
- While peaches grill, whisk together olive oil, red wine vinegar, and black pepper in a small bowl.
- Toss spring mix with the dressing in a large bowl until lightly coated.
- Spread dressed greens on a serving platter.
- Arrange grilled peaches on top of the greens.
- Crumble feta cheese over the salad and drizzle with any remaining honey from grilling.
- Serve immediately.
Notes
Ensure peaches are ripe and soft before grilling; hard peaches will be sour. Do not dress the greens too early to prevent wilting. Store grilled peaches and greens separately in the fridge for up to 2 days if meal prepping. Do not freeze the salad.
