Instructions

  1. Melt butter in a medium saucepan over medium heat. Stir constantly until it foams, settles, and develops brown specks with a nutty aroma (3-5 minutes).
  2. Pour brown butter into a heatproof bowl and let cool for 5 minutes until warm but not hot.
  3. Add granulated sugar and brown sugar to the warm butter. Whisk vigorously for 2 minutes until glossy and slightly thickened.
  4. Stir in eggs and vanilla extract until just combined.
  5. Whisk together flour, baking soda, and salt in a separate bowl.
  6. Gently fold dry ingredients into the wet mixture until no streaks of flour remain. Do not overmix.
  7. Fold in chocolate chips, reserving a small handful for topping if desired.
  8. Scoop dough onto a parchment-lined baking sheet. Chill for 15-30 minutes if time permits (optional but recommended for thicker cookies).
