Ingredients
Scale
- 1 cup (175g) semi-sweet or dark chocolate chips
- 1/2 cup (115g) unsalted butter, room temperature
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- 1 cup (125g) all-purpose flour
- 1/4 cup (25g) unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup (55g) butter, softened (for cookie dough)
- 1/2 cup (100g) packed brown sugar (for cookie dough)
- 1/4 cup (50g) granulated sugar (for cookie dough)
- 1 tablespoon whole milk (for cookie dough)
- 1 cup (125g) all-purpose flour (for cookie dough)
- 1/2 cup (85g) mini chocolate chips (for cookie dough)
- 1/4 teaspoon salt (for cookie dough)
- 1 teaspoon vanilla extract (for cookie dough)
- Sea salt flakes (optional topping)
- Extra chocolate chips (optional topping)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper and grease lightly.
- In a medium bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the milk and vanilla extract to the cookie dough mixture and mix until combined.
- Stir in the flour and salt until just combined. Fold in the chocolate chips.
- Roll the dough into 16 equal-sized balls (about 1 tablespoon each). Place on a parchment-lined sheet and freeze for at least 30 minutes until firm.
- In a large microwave-safe bowl, melt the butter and chocolate chips together in 30-second intervals, stirring until smooth. Let cool for 5 minutes.
- Whisk in the granulated sugar until glossy. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract.
- Sift the flour, cocoa powder, and salt over the wet ingredients. Gently fold in with a spatula until just combined.
- Spread half of the brownie batter into the prepared pan.
- Place the frozen cookie dough balls evenly spaced on top of the batter.
- Pour the remaining brownie batter over the dough balls, swirling gently to cover them.
- Bake for 25-30 minutes, until the top is set and a toothpick inserted into the brownie part (not the center) comes out with moist crumbs.
- Let brownies cool completely in the pan on a wire rack for at least 1 hour before cutting to allow centers to set.
Notes
Freezing the cookie dough balls is critical to prevent them from melting into the batter. Do not cut the brownies while warm, as the centers will be molten and leak out. For best results, let them cool for at least an hour or overnight. Store in an airtight container at room temperature for up to 3 days.
