Description
A homemade version of Chipotle’s famous burrito bowl, inspired by family tradition. This recipe features charred pepper salsa, roasted chicken thighs, and fluffy rice, offering a healthier and more flavorful alternative to takeout.

- 1.5 lbs boneless, skinless chicken thighs
- 2 large jalapeno peppers
- 2 large ripe tomatoes
- 1 medium white onion
- 1/2 cup fresh cilantro
- 2 limes (juice only)
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 cup long grain white rice
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup shredded Mexican cheese blend
- 1 large avocado, sliced
- 2 tbsp vegetable oil
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Cut chicken thighs into 1-inch chunks. In a bowl, toss with 1 tbsp vegetable oil, garlic powder, chili powder, salt, and pepper. Let marinate.
- In a blender, combine chopped jalapenos, tomatoes, onion, cilantro, lime juice, cumin, salt, and 1 tbsp vegetable oil. Blend until smooth to make the salsa.
- Spread marinated chicken in a single layer on a parchment-lined sheet pan. Roast for 20-25 minutes, flipping halfway, until charred and cooked through.
- Rinse rice until water runs clear. In a saucepan, combine rice, 2 cups water, salt, and cumin. Bring to boil, reduce heat, cover, and simmer for 18-20 minutes. Let rest covered for 5 minutes, then fluff.
- Warm black beans in a small saucepan with a pinch of cumin and water for 5 minutes.
- Assemble bowls with rice, chicken, beans, salsa, cheese, and avocado.
Notes
For authentic smoky flavor, roast jalapenos under the broiler until blackened before blending. Rinse rice thoroughly to prevent stickiness. Let rice rest after cooking for fluffy grains. Avocado should be added fresh before eating to prevent browning.
