  • 2 cups chopped frozen broccoli florets (about 200g)

  • 1/2 cup sour cream (120g)
  • 1/2 cup chicken broth (120ml)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese (100g)
  • 1/4 cup grated Parmesan cheese (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 baking dish with butter or cooking spray.
  2. Cook rice according to package directions until tender. Fluff with a fork and set aside. Ensure you have 2 cups of cooked rice.
  3. If using fresh broccoli, steam or blanch for 2-3 minutes until tender-crisp. If using frozen, chop large florets into bite-sized pieces. Drain well and squeeze out excess moisture.
  4. In a large mixing bowl, whisk together cream of mushroom soup, sour cream, chicken broth, garlic powder, onion powder, and black pepper until smooth.
  5. Add the cooked rice, shredded chicken, and broccoli to the sauce mixture. Stir gently until everything is evenly coated.
  6. Stir in half of the shredded cheddar cheese. Reserve the other half for the top.
  7. Pour the mixture into the prepared baking dish and spread evenly. Sprinkle the remaining cheddar cheese and optional Parmesan on top.
  8. Bake for 20-25 minutes until the top is bubbly and slightly golden. For a crispier top, broil for the last 2-3 minutes, watching closely to prevent burning.
  9. Let the casserole rest for 5-10 minutes before serving to allow the sauce to thicken.

Notes

For best results, use day-old rice or cook rice al dente to prevent mushiness. Ensure broccoli is well-drained to avoid a watery casserole. This dish tastes even better the next day as flavors meld. It does not freeze well due to the dairy content; store leftovers in the refrigerator for up to 4 days. Reheat with a splash of milk or cream to maintain creaminess.
