- ½ cup all-purpose flour
- ½ cup cornmeal
- 2 large eggs
- 2 tablespoons milk
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon cayenne pepper
- Salt and black pepper to taste
- 1–2 tablespoons avocado oil or olive oil
Instructions
- Wash the okra thoroughly under cold water. Trim off the stem ends, leaving a small bit of stem on. Pat them completely dry with paper towels, then let them air dry for 10 minutes.
- In a large bowl, combine the flour, cornmeal, garlic powder, smoked paprika, cayenne, salt, and black pepper. Whisk to distribute spices evenly.
- In a shallow dish, whisk the eggs and milk together until smooth.
- Dip okra pods into the egg wash, letting excess drip off, then roll them in the cornmeal mixture, pressing gently to ensure the coating sticks.
- Lightly spray or brush the coated okra with oil and sprinkle with a tiny bit more salt if desired.
- Preheat air fryer to 400°F (200°C). Arrange okra in a single layer in the basket without overlapping.
- Air fry for 8-10 minutes, shaking the basket halfway through, until golden brown and crisp.
- Serve immediately while hot.
Notes
Ensure okra is completely dry before coating to prevent sliminess. Do not overcrowd the air fryer basket; cook in batches if necessary. For best results, serve immediately. Leftovers can be reheated in the air fryer at 350°F for 3-4 minutes to restore crispness.
