Description
A rich, creamy, and comforting dairy-free rice pudding made in a slow cooker using almond milk and coconut milk. It is naturally gluten-free, easy to make, and tastes better than traditional dairy versions.

- 1 cup short-grain white rice (Arborio or Sushi Rice)
- 3 cups unsweetened almond milk
- 1/2 cup full-fat canned coconut milk
- 1/3 to 1/2 cup granulated sugar (adjust to taste)
- 1 tablespoon unsalted butter or coconut oil
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- Optional: 1/2 cup raisins, 1 teaspoon lemon zest, 1/4 teaspoon nutmeg
Instructions
- Rinse 1 cup of Arborio rice under cold water in a fine-mesh strainer until the water runs clear to remove excess surface starch.
- In a large mixing bowl, combine the rinsed rice, almond milk, coconut milk, sugar, cinnamon, salt, and butter (or coconut oil). Stir well to dissolve the sugar.
- Pour the mixture into a 4-quart slow cooker pot and stir gently to distribute the rice evenly.
- Cover and cook on HIGH for 4 hours. Do not open the lid during cooking.
- After 4 hours, stir the pudding vigorously to emulsify the fats and check the texture. If too thick, add a splash of almond milk; if too thin, let it sit on ‘Keep Warm’ for 30 minutes.
- Stir in the vanilla extract.
- Let the pudding cool in the slow cooker for about 30 minutes to thicken further.
- Serve warm or chilled, topped with fresh fruit, nuts, or whipped cream if desired.
Notes
The pudding thickens significantly as it cools and tastes even better the next day. If using long-grain rice, add extra liquid and cook longer. For a vegan version, ensure almond milk is certified vegan and use coconut oil instead of butter. Store in the refrigerator for up to 5 days.
