Description
A comforting, forgiving meatloaf recipe that delivers maximum satisfaction with minimal effort. Featuring a juicy 80/20 ground beef base and a sticky, sweet brown sugar ketchup glaze, this dish is perfect for tired evenings.
Ingredients
Scale
- 1.5 lbs ground beef (80/20 blend)
- 1 cup plain bread crumbs
- 1/2 cup whole milk
- 1 large egg
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup packed brown sugar
- 1/2 cup ketchup
- 1 tsp apple cider vinegar
Instructions
- Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper or a sheet pan with foil.
- Finely dice the onion and mince the garlic.
- In a small bowl, whisk together ketchup, brown sugar, Dijon mustard, and apple cider vinegar. Microwave for 30 seconds if needed to dissolve sugar. Set aside.
- In a large mixing bowl, combine bread crumbs and milk. Let sit for 1 minute to form a panade.
- Add ground beef, diced onion, minced garlic, egg, Worcestershire sauce, salt, and pepper to the bowl.
- Gently mix the ingredients with your hands until just combined. Do not overmix.
- Transfer mixture to the prepared pan. Press firmly into a loaf pan or shape into a log on a sheet pan.
- Bake for 40 minutes.
- Remove from oven and pour the glaze over the top, spreading evenly.
- Return to oven and bake for another 15 minutes, until internal temperature reaches 160°F (71°C).
- Let rest for at least 10 minutes before slicing to allow juices to redistribute.
Notes
Do not overmix the meat or it will become dense. Use a thermometer to ensure the internal temperature reaches 160°F. Resting the meatloaf for 10 minutes is crucial to keep it juicy. Leftovers taste better the next day.
