Description
Crispy, spicy, and creamy homemade buffalo chicken egg rolls that are easier to make than takeout. Perfect for game day parties or quick weeknight dinners.

- 3 cups shredded rotisserie chicken (about 450g)
- 8 oz cream cheese, softened
- ½ cup buffalo sauce (e.g., Frank’s RedHot)
- 1 cup shredded sharp cheddar cheese
- 1 packet ranch seasoning (or 2 tbsp homemade mix)
- 3 stalks green onions, chopped
- Salt and pepper to taste
- 12–15 egg roll wrappers
- Oil for frying (peanut, vegetable, or canola)
- 1 egg, beaten with 1 tablespoon water (for egg wash)
Instructions
- In a large bowl, combine shredded chicken, softened cream cheese, buffalo sauce, shredded cheddar, and ranch seasoning. Mix until it resembles a thick, creamy chicken salad.
- Stir in chopped green onions. Taste and add salt and pepper if needed.
- Lay out egg roll wrappers diamond-side up on a cutting board. Keep covered with a damp towel to prevent drying.
- Place about ¼ cup of filling in the center of a wrapper, slightly below the middle.
- Fold the bottom corner up over the filling, then fold in the left and right corners, tucking them in tight.
- Brush the top corner with egg wash and roll the wrapper up tightly, pressing out air bubbles.
- Heat about 2 inches of oil in a Dutch oven or deep pot to 350°F (175°C).
- Fry egg rolls in batches for 3-4 minutes, turning occasionally, until golden brown and crispy.
- Remove with a slotted spoon and place on a wire rack over paper towels to drain.
- Serve immediately with ranch dressing and blue cheese for dipping.
Notes
For extra crunch, double fry the egg rolls. To bake instead of fry, brush with oil and bake at 400°F (200°C) for 15-20 minutes, flipping halfway. These can be frozen raw for up to 3 months; add 2-3 minutes to cooking time if frying from frozen.
