Ingredients
- 12 oz sirloin or ribeye steak (cut into 1-inch cubes)
- 2 tbsp avocado oil or olive oil
- 4 tbsp unsalted butter
- 4 cloves fresh garlic (minced)
- 1 tsp kosher salt
- 0.5 tsp black pepper
- 2 tbsp fresh herbs (thyme or parsley, chopped)
Instructions
- Pat the steak cubes dry with paper towels and season all sides generously with salt and pepper.
- Heat a 10-inch cast iron or heavy-bottomed skillet over medium-high heat for about 2 minutes until hot.
- Add the oil to the pan and swirl to coat. Wait until the oil shimmers.
- Add the steak cubes to the pan in a single layer, ensuring they are not crowded. Sear for 1-2 minutes without moving them to develop a crust.
- Flip the bites and cook for another 2-3 minutes, tossing occasionally, until cooked to desired doneness (4-5 minutes total for medium-rare).
- Remove the steak from the pan and set aside on a plate.
- Reduce heat to medium-low. Add the butter to the same pan and let it melt and foam.
- Add the minced garlic and stir constantly for 30-60 seconds until fragrant and golden, being careful not to burn it.
- Return the steak bites to the pan and toss to coat evenly in the garlic butter sauce for 30 seconds.
- Sprinkle with fresh herbs and serve immediately.

Do not crowd the pan, as this will cause the meat to steam rather than sear. If your pan is small, cook in two batches. Always pat the steak dry before cooking to ensure a good sear.
