  • 1/2 cup fresh lime juice (from 45 limes)
  • 1 large bunch fresh cilantro (about 1 cup, chopped, including stems)
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 3 tablespoons vegetable oil
  • Salt and black pepper to taste
  • 1216 small corn or flour tortillas
  • 2 cups shredded cabbage or coleslaw mix
  • 2 ripe avocados, sliced
  • Lime wedges for serving
  • Hot sauce or salsa verde (optional)

Instructions

  1. In a medium mixing bowl, whisk together fresh lime juice, chopped cilantro, minced garlic, ground cumin, chili powder, vegetable oil, 1 teaspoon salt, and 1/2 teaspoon black pepper until emulsified.
  2. Pat tilapia filets dry with paper towels. Place fish in a shallow dish or zip-top bag and pour marinade over it, ensuring all sides are coated.
  3. Marinate in the refrigerator for 10-30 minutes. Do not exceed 30 minutes to prevent the acid from making the fish mushy.
  4. Preheat grill to medium-high heat (approx. 400°F/200°C). Clean grates thoroughly and oil them using a paper towel dipped in oil held with tongs.
  5. Place fish filets on the grill (using a grill basket or foil packet if desired). Grill for 3-4 minutes without moving, until color changes to opaque white halfway up the side.
  6. Gently flip fish using tongs and grill for another 3-4 minutes until fish flakes easily with a fork and internal temperature reaches 145°F (63°C).
  7. While fish grills, warm tortillas directly on grill grates for 30 seconds per side or in foil.
  8. Break grilled fish into large chunks. Assemble tacos by spooning slaw onto warm tortillas, topping with fish, sliced avocado, and extra cilantro. Serve with lime wedges and hot sauce.

Notes

Do not over-marinate the fish as the lime juice acid can break down the texture if left too long. Oil the grill grates thoroughly to prevent sticking. For a vegetarian option, substitute firm tofu or portobello mushrooms. If you don’t have a grill, use a grill pan or cast-iron skillet on the stovetop.
