  • 2 cups cooked chicken, shredded (280g)
  • 1/2 cup plain Greek yogurt (120g)
  • 1/4 cup buffalo sauce (60ml)
  • 3 stalks green onion, finely chopped (30g)
  • 2 tablespoons blue cheese dressing (30ml)
  • 1/2 teaspoon garlic powder (3g)
  • Salt and black pepper to taste

Instructions

  1. Wash the celery thoroughly and trim off the bottom base. Separate each stalk and trim the top at an angle to create a boat shape. Scrape out tough inner fibers if necessary. Pat the celery completely dry with paper towels.
  2. Place the shredded chicken in a large mixing bowl. Use two forks to ensure the pieces are bite-sized and uniform.
  3. Add the Greek yogurt, buffalo sauce, blue cheese dressing, chopped green onions, garlic powder, salt, and pepper to the chicken. Stir until well combined. Taste and adjust seasoning or spice level as desired.
  4. Use a small spoon to pack the chicken mixture into the natural grooves of the dried celery stalks.
  5. Arrange the stuffed celery boats on a platter. Serve immediately or refrigerate covered for up to a few hours before serving.
