Description

These smoked pumpkin protein muffins offer a high-protein, low-sugar breakfast option infused with sweet hickory smoke. Perfect for meal prep, they are gluten-free friendly and cook quickly on a grill or smoker.


Ingredients

  • 1 cup (245g) 100% pure pumpkin puree
  • 1 scoop (30g) vanilla whey isolate or plant-based protein powder
  • 1.5 cups (150g) almond flour
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 0.5 tsp ground nutmeg
  • 2 large eggs
  • 0.5 cup (120ml) unsweetened almond milk
  • 0.25 cup (80g) real maple syrup
  • 3 tbsp (42g) melted coconut oil
  • 1 tsp baking powder

Instructions

  1. Preheat your smoker or grill to 325°F (163°C). If using wood chips, soak them for 30 minutes or prepare your smoker box.
  2. In a large bowl, whisk together the dry ingredients: almond flour, protein powder, baking powder, cinnamon, ginger, and nutmeg.
  3. In a separate bowl, mix the wet ingredients: pumpkin puree, eggs, almond milk, maple syrup, and melted coconut oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are fine.
  5. Lightly grease mini muffin tins (or line with foil). Spoon the batter into each cup, filling them about 3/4 full.
  6. Place the tins on the grill grate over the indirect heat zone. Close the lid and smoke for 20-25 minutes.
  7. After 15 minutes, check the tops. If they are browning too fast, tent them loosely with foil.
  8. The muffins are done when a toothpick inserted in the center comes out clean or the internal temperature reaches 200°F (93°C).
  9. Remove the tins from the grill and let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

Ensure pumpkin puree is not watery; drain if necessary. Use room temperature eggs for better mixing. Do not overbake as protein powder dries out quickly; use a thermometer to check for 200°F internal temp. These freeze well for up to 3 months.
