Smoky, spicy, and creamy grilled sweet potatoes stuffed with high-protein buffalo chicken, topped with a cooling Greek yogurt ranch drizzle and blue cheese crumbles.

- 4 medium sweet potatoes (approx. 2 lbs / 900g)
- 2 large boneless, skinless chicken breasts (approx. 1.5 lbs / 680g)
- 1/2 cup (120ml) buffalo sauce (e.g., Frank’s RedHot)
- 1/2 cup (120g) full-fat plain Greek yogurt
- 1 tbsp (15g) dry ranch seasoning
- 4 stalks green onions, sliced
- 1/4 cup (30g) blue cheese crumbles
- 2 tbsp (30g) butter or olive oil
- Salt and pepper to taste
Instructions
- Wash, scrub, and dry sweet potatoes. Poke 4-5 times with a fork, rub with olive oil, and sprinkle with salt.
- Set up grill for indirect heat: For charcoal, pile briquettes to one side with a drip pan on the other. For gas, light only one side. Target temperature is 350-375°F (175-190°C).
- Place sweet potatoes on the indirect heat zone. Close lid and grill for 45-60 minutes, rotating every 15 minutes, until internal temperature reaches 205°F (96°C) and they are soft.
- While potatoes grill, cook chicken (boil, bake, or grill). Shred warm chicken with two forks and toss with buffalo sauce.
- In a small bowl, mix Greek yogurt with ranch seasoning. Add a splash of milk or water if needed to thin.
- Slice cooked sweet potatoes lengthwise, fluff the inside with a fork, and stuff generously with the buffalo chicken mixture.
- Optional: Return stuffed potatoes to indirect heat for 2-3 minutes to warm through.
- Garnish with blue cheese crumbles and sliced green onions. Drizzle with the yogurt ranch mixture and serve immediately.
Notes
Ensure sweet potatoes reach an internal temperature of 205°F for best texture. Use indirect heat to prevent burning. Shred chicken while warm for better sauce absorption. This recipe is naturally gluten-free, but check sauce labels. Leftovers store in the fridge for up to 4 days; do not freeze.
