Description
A quick, high-protein breakfast parfait that combines thick Greek yogurt, protein powder, honey, granola, and fresh berries. It is designed to keep you full until lunch and can be assembled in just 5-10 minutes.
Ingredients
- 2 cups (450g) Greek Yogurt (full-fat or 2% recommended)
- 1 scoop (30g) Protein Powder (vanilla or unflavored whey or plant-based)
- 2–3 tablespoons (40-60ml) Honey or Maple Syrup
- 1 cup (80g) Granola
- 1 cup (150g) Mixed Berries (strawberries, blueberries, raspberries)
- 2 tablespoons (15g) Chopped Nuts or Seeds (almonds, walnuts, chia, or pumpkin seeds)
- 1 tablespoon (15g) Nut Butter (optional, almond or peanut butter)
- Splash of milk (optional, to adjust yogurt consistency)
Instructions
- Scoop Greek yogurt into a medium bowl. If using protein powder, add one scoop.
- Add a splash of milk if the yogurt is too thick. Whisk vigorously until the protein powder is completely dissolved and the mixture is smooth.
- Wash and chop berries. If using frozen fruit, let them thaw slightly. Chop nuts into bite-sized pieces.
- In a mason jar or serving bowl, add a layer of protein yogurt (about 1/2 cup).
- Add a layer of granola (2-3 tablespoons).
- Add a generous layer of fresh berries.
- Repeat layers: yogurt, granola, berries. End with a final layer of yogurt on top.
- Top with remaining granola for crunch, drizzle with extra honey, and sprinkle with chopped nuts or seeds.
- Serve immediately or seal and store in the refrigerator for up to 3 days.
Notes
For best texture, eat within 24-48 hours. If meal prepping for more than 2 days, store granola separately and add just before eating to prevent sogginess. Do not freeze as yogurt will separate. Use thick, strained Greek yogurt for the best consistency.
