A rich, creamy latte made with roasted sugar pumpkin puree, custom spice blend, and frothed milk, offering authentic autumn flavor without the artificial aftertaste of canned alternatives.
Ingredients
- 1 cup (240g) fresh sugar pumpkin puree (roasted and mashed)
- 2 shots (60ml) espresso or strong coffee
- 1 cup (240ml) whole milk (divided)
- 1–2 tbsp maple syrup
- 1 tsp pumpkin pie spice (or blend: 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ginger, 1/8 tsp cloves)
- 1/2 tsp pure vanilla extract
Instructions
- Preheat oven to 400°F (200°C). Cut sugar pumpkin in half, scoop out seeds, and place cut-side down on a parchment-lined baking sheet.
- Roast for 30-40 minutes until tender. Let cool, scoop out flesh, and mash into a smooth puree. If too watery, cook down in a saucepan for 5 minutes to evaporate excess moisture.
- In a small saucepan, combine 1 cup pumpkin puree, 1/2 cup milk, maple syrup, and pumpkin spice. Warm over medium-low heat for 3-4 minutes, stirring constantly. Do not boil. Remove from heat and stir in vanilla extract.
- Brew espresso or strong coffee (2 shots).
- Heat remaining 1/2 cup milk until hot (approx. 150°F/65°C) but not boiling. Froth using a handheld frother or French press until velvety microfoam forms.
- Pour spiced pumpkin mixture into a mug, add espresso, and stir gently.
- Pour frothed milk over the top, holding a spoon to catch foam, then spoon remaining foam on top. Dust with extra spice if desired.
Notes
Roasting the pumpkin is crucial for deep flavor; steaming results in a watery, bland taste. Ensure pumpkin puree is thick, not runny, to avoid a watery latte. You can roast the pumpkin ahead of time and store puree in the fridge for up to 5 days or freeze for 3 months. Do not boil the milk as it will scald and lose sweetness. For a vegan version, use oat milk and maple syrup.
