Crunchy, customizable, and addictive homemade spiced roasted nuts made with a secret egg white wash for maximum crispiness. A cheap, healthy alternative to store-bought snacks.

- 2 pounds (900g) raw nuts (almonds, cashews, pecans, walnuts, or macadamia nuts)
- 1 large egg white
- 2 tablespoons (30ml) neutral oil (avocado or light olive oil)
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1–2 teaspoons flaky sea salt
- 1 tablespoon maple syrup or honey (optional, for sweet version)
Instructions
- Preheat oven to 300°F (150°C). Line a large baking sheet with parchment paper.
- In a large mixing bowl, whisk the egg white vigorously until frothy and aerated.
- Add the raw nuts to the bowl and toss until every nut is coated in a thin, glossy layer of egg white. Drain any excess liquid.
- Sprinkle garlic powder, onion powder, smoked paprika, cumin, and salt over the nuts. Toss vigorously to distribute spices evenly. Add maple syrup or honey if making a sweet version.
- Spread the nuts in a single layer on the prepared baking sheet.
- Roast for 20-25 minutes. Stir the nuts halfway through (at the 10-minute mark) to ensure even roasting.
- Check for golden brown color and fragrance. Remove from oven if done, or roast for another 2-5 minutes if pale. Watch closely to prevent burning.
- Let the nuts cool completely on the pan (30-45 minutes) until room temperature. They will crisp up as they cool.
- Transfer to an airtight container once completely cool. Store at room temperature for up to 2 weeks.
Notes
Use raw, unsalted nuts only. Pre-roasted nuts will burn and become too salty. The egg white wash is crucial for the crunchy texture. Ensure nuts are completely cool before storing to maintain crispness. If using a mix of nuts with different sizes, remove smaller nuts earlier to prevent burning.
