A relaxing, five-minute weekend drink that combines the calming scent of lavender with the natural sweetness of honey and rich coffee. It’s an easy-to-make iced latte that feels like a spa day for your taste buds.


Ingredients

  • 1 tablespoon dried culinary lavender
  • 1/2 cup water
  • 1/4 cup raw honey
  • 1/2 teaspoon vanilla extract (optional)
  • 2 shots espresso or 60ml strong coffee
  • 1 cup milk of choice (whole, oat, or almond)
  • 1 cup ice cubes
  • 12 small sprigs fresh lavender for garnish

Instructions

  1. In a small saucepan, combine water, honey, and dried lavender. Heat over medium-low heat until honey dissolves and mixture begins to simmer.
  2. Remove from heat, cover, and let steep for 10 minutes to infuse the lavender flavor.
  3. Strain the mixture through a fine-mesh sieve into a jar, discarding the lavender buds. Allow syrup to cool.
  4. Brew espresso or strong coffee and let it cool to room temperature.
  5. Fill a tall highball glass with ice cubes.
  6. Pour in the cold coffee, leaving about an inch of space at the top.
  7. Add 1-2 tablespoons of the lavender honey syrup, depending on desired sweetness, and stir gently.
  8. Pour cold milk over the coffee mixture. For a layered look, pour slowly over the back of a spoon.
  9. Garnish with a fresh lavender sprig and serve immediately.

Notes

Do not boil the lavender as it can make the syrup taste soapy or bitter. Use raw honey for better flavor complexity. The lavender honey syrup can be made ahead and stored in the fridge for up to two weeks. For a vegan version, swap dairy milk for oat or almond milk. If using fresh lavender, use three times the amount of dried lavender.
