Description

Crispy on the outside and tender on the inside, these easy homemade corn and crab fritters are a fast, flavorful appetizer perfect for holidays or weeknight dinners.


Ingredients

  • 8 oz lump crab meat, drained and patted dry
  • 1 cup corn kernels (fresh or frozen, thawed)
  • 3 medium green onions, finely chopped
  • 1 small red bell pepper, finely diced
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Vegetable oil for frying

Instructions

  1. Drain the crab meat thoroughly and pat it dry with paper towels to remove excess moisture. Gently break up large clumps while keeping lumps intact.
  2. In a large bowl, combine the crab, corn, green onions, and red bell pepper. Toss gently.
  3. In a separate small bowl, whisk together the egg, mayonnaise, Dijon mustard, Old Bay seasoning, garlic powder, salt, and pepper until smooth.
  4. Pour the wet mixture over the crab and corn mixture. Fold gently to combine, being careful not to crush the crab lumps.
  5. Gradually fold in the panko breadcrumbs. The mixture should be moist enough to hold together but loose enough to drop by spoonfuls. Adjust with more egg/mayo or panko if needed.
  6. Pour about 1/2 inch of vegetable oil into a large skillet or cast iron pan. Heat over medium-high heat until it reaches 350°F (175°C).
  7. Using two tablespoons, drop small mounds of the mixture into the hot oil. Do not overcrowd the pan; fry in batches.
  8. Fry for 2-3 minutes per side, flipping only once, until golden brown and crispy.
  9. Remove fritters with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
  10. Serve immediately while hot and crispy.

Notes

Pat the crab meat dry to ensure crispy fritters. Do not overcrowd the pan to maintain oil temperature. The batter can be made up to 24 hours in advance and stored in the fridge. For a baked option, bake at 400°F for 15-20 minutes, flipping halfway.
