Description

A flavorful recipe for bratwurst that are first poached in beer to ensure juiciness, then grilled for a smoky char, and served with sweet, caramelized beer onions on soft buns.

  • 1216 raw pork bratwurst links
  • 1 large bottle (1216 oz) lager or pilsner beer
  • 3 large yellow onions, sliced into half-moons
  • 2 tablespoons unsalted butter
  • 1 tablespoon brown sugar
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1216 soft buns (brioche or potato rolls)
  • Optional toppings: sauerkraut, spicy mustard, ketchup, pickled jalapeños

Instructions

  1. Slice the onions into ¼-inch thick half-moons and set aside.
  2. Place a large skillet or Dutch oven over medium-high heat and pour in the beer. Bring to a gentle simmer.
  3. Carefully place the raw bratwurst into the beer. Reduce heat to medium-low and poach for 10-12 minutes, flipping halfway through.
  4. Remove the brats with a slotted spoon and pat them dry thoroughly with paper towels.
  5. In a large saucepan, melt butter over medium heat. Add onions and a pinch of salt; cook for 10 minutes until softened.
  6. Add brown sugar and minced garlic; continue cooking for 10-15 minutes until onions are deep golden brown and sweet.
  7. Stir in Dijon mustard and ¼ cup of reserved beer from the brat pot. Simmer for 2 minutes to create the sauce.
  8. Preheat grill to medium-high (375-400°F) and oil the grates.
  9. Grill the poached brats for 3-4 minutes per side until grill marks appear and skin is crispy (total 12-15 minutes).
  10. Toast buns cut-side down on the grill for the last 2 minutes.
  11. Assemble sandwiches by placing grilled brats in toasted buns and topping generously with the warm beer-onion mixture.

Notes

Pat the brats dry after poaching to ensure a good sear on the grill. Caramelize onions low and slow for best results. Reserve some beer from the poaching liquid for the sauce. Do not freeze the onions as they become mushy upon thawing.
