Description
A simple, impressive summer dessert featuring caramelized grilled pineapple topped with a rich cinnamon honey butter. This gluten-free treat requires no oven, making it perfect for hot days and outdoor cookouts.
Ingredients
Scale
- 1 large or 2 medium fresh pineapples (sliced into ½-inch rings or spears)
- ½ cup (115g) unsalted butter, softened
- ¼ cup (60ml) raw honey
- 1 teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- Pinch of sea salt
- Vanilla ice cream or whipped cream (optional, for serving)
- Chopped pecans or walnuts (optional, for serving)
Instructions
- Prep the pineapple: Cut off the top and bottom, slice off the skin, remove eyes, and cut into ½-inch rings or spears. Pat pieces dry thoroughly with paper towels to ensure proper caramelization.
- Make the cinnamon honey butter: In a small bowl, whisk together softened butter, honey, cinnamon, vanilla extract, and sea salt until smooth and creamy.
- Preheat the grill: Heat grill to medium-high (approx. 400°F). Clean grates thoroughly and oil them generously using a paper towel held with tongs to prevent sticking.
- Grill the pineapple: Place pineapple on the grill. Cook for 3-4 minutes without moving to develop grill marks and caramelization.
- Add butter: Flip the pineapple and spread the cinnamon honey butter mixture generously over the cut side of each piece.
- Finish grilling: Close the lid and cook for another 3-4 minutes until the butter bubbles and caramelizes, and the pineapple is tender but holds its shape.
- Serve: Remove from grill and serve immediately, optionally topped with vanilla ice cream, whipped cream, or toasted nuts.
Notes
Patting the pineapple dry is crucial to prevent steaming. If using canned pineapple, drain and press out excess liquid. The cinnamon honey butter can be made up to 2 days in advance and stored in the fridge. Do not freeze grilled pineapple as the texture becomes mushy.
