These make-ahead breakfast sliders are the ultimate tailgate or brunch solution. By assembling them the night before and baking them on game day, you get hot, gooey, savory sandwiches with soft brioche, sausage, and cheese without the morning stress.
Ingredients
- 1 sheet (1 lb / 450g) brioche dough, thawed
- 1 lb (450g) pork sausage (mild Italian or breakfast), casings removed if using links
- 4 large eggs
- 2 cups (200g) sharp cheddar cheese, shredded
- 4 tbsp (60g) unsalted butter, melted
- 2 tbsp (30ml) maple syrup
- Pinch of garlic powder
- Salt and pepper to taste
Instructions
- Cook the sausage in a large skillet over medium-high heat until browned and cooked through (8-10 minutes). Break into small pieces and drain excess grease.
- Whisk eggs with salt and pepper. Scramble gently in a non-stick pan over medium-low heat until just set but still soft. Remove from heat while slightly wet.
- Mix the scrambled eggs with the cooked sausage.
- Roll out the brioche dough slightly if needed to fit a 9×13 inch baking dish. Press into the dish evenly.
- Sprinkle half of the shredded cheddar cheese over the dough.
- Spread the sausage and egg mixture evenly over the cheese.
- Top with the remaining cheese.
- Mix melted butter, maple syrup, and a pinch of garlic powder. Brush generously over the top cheese layer.
- Cover the dish tightly with plastic wrap and heavy-duty foil. Refrigerate overnight (up to 24 hours).
- Preheat oven to 350°F (175°C). Remove dish from fridge 15 minutes before baking.
- Bake for 20-25 minutes until cheese is bubbly and top is golden brown.
- Let rest for 5 minutes before slicing and serving.
Notes
The key trick is covering the assembled sliders with plastic wrap and refrigerating overnight. The cold butter sets on top, creating a seal that steams the bread from the inside out, keeping it soft. Let the sliders rest for 5 minutes after baking to allow the cheese to set so they hold together when picked up. Do not freeze baked sliders as the texture becomes dry; freeze the unbaked assembly instead.
