  • 1/2 cup sun-dried tomatoes packed in oil, chopped (70g)
  • 1 cup heavy cream (240ml)
  • 5 cloves garlic, minced (1 tbsp)
  • 1/2 cup freshly grated Parmigiano-Reggiano cheese (50g)
  • 2 tbsp unsalted butter (30g)
  • 1/2 cup low-sodium chicken broth (120ml)
  • Salt and black pepper to taste
  • Fresh basil for garnish (optional)
  • Lemon juice or white wine vinegar for finishing (optional)

Instructions

  1. Pat chicken breasts dry and season generously with salt and pepper. If thick, pound to 1/2 to 3/4 inch thickness.
  2. Heat a large skillet over medium-high heat. Add butter and melt until foaming.
  3. Sear chicken breasts for 3-4 minutes per side until golden brown. Remove to a plate and set aside.
  4. Reduce heat to medium. Add minced garlic to the pan and sauté for 60 seconds until fragrant.
  5. Pour in chicken broth and scrape up brown bits from the bottom of the pan. Simmer for 1 minute.
  6. Add chopped sun-dried tomatoes and their oil. Simmer for another minute.
  7. Pour in heavy cream and stir to combine. Simmer gently for 2 minutes until slightly thickened.
  8. Remove pan from heat and stir in grated parmesan cheese until melted and smooth.
  9. Return chicken to the pan, nestling it into the sauce. Cover and simmer for 5-7 minutes until chicken reaches 165°F (74°C).
  10. If sauce is too thin, simmer uncovered for 1-2 minutes. Adjust seasoning, slice chicken, and serve with sauce.

Notes

Do not overcook the chicken; remove it from the sauce once it reaches 165°F to prevent drying out. Save the oil from the sun-dried tomatoes to add depth of flavor. For a dairy-free version, substitute heavy cream with full-fat coconut milk. Add a squeeze of lemon juice or splash of vinegar before serving to cut through the richness.
