Instructions
- Crack eggs into a small mixing bowl. Add heavy cream (or milk), salt, and pepper. Whisk vigorously with a fork until the mixture is uniform yellow and frothy to incorporate air.
- Place an 8-inch non-stick skillet over medium-low heat. Add butter and let it melt and foam completely without browning. If it smokes, remove from heat briefly.
- Pour the egg mixture into the center of the pan. It should sizzle gently.
- Immediately use a heatproof spatula to gently push cooked edges toward the center, tilting the pan so uncooked liquid egg flows into empty spaces. Repeat around the pan for about 30 seconds to create layers.
- Once eggs are mostly set but still slightly wet on top, sprinkle shredded cheese evenly over one half of the omelette. Add optional veggies now if using.
- Tilt the pan toward you. Gently fold the empty half of the omelette over the cheesy half to form a half-moon shape. Let sit for 10 seconds to seal.
- Tilt the pan over a warm plate and let the omelette slide out. Serve immediately, topped with fresh chives or pepper if desired.
Notes
Use room temperature eggs for even cooking. Grate your own cheese to avoid anti-caking agents that prevent smooth melting. Cook on medium-low heat to prevent rubbery texture. Eggs continue to cook off-heat, so remove when slightly wet on top. Do not freeze leftovers as eggs become watery and rubbery.
