Description

A quick, no-bake breakfast hack made with just five simple ingredients. These energy bites are sweet, chewy, and packed with protein and fiber to keep you fueled all morning.


Ingredients

  • 2 cups Medjool dates, pitted (about 300g)
  • 1 cup raw almonds (120g)
  • 1 cup old-fashioned rolled oats (80g)
  • 2 tablespoons raw honey (30ml)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: 1 tablespoon chia seeds, 2 tablespoons dark chocolate chips, or 2 tablespoons coconut flakes

Instructions

  1. Pit the dates using kitchen shears. If dates are sticky, dampen your hands with water first.
  2. Add almonds and rolled oats to a food processor. Pulse 10-15 times until broken down into pea-sized crumbs. Do not over-process into butter.
  3. Add pitted dates, honey, vanilla extract, and salt to the food processor.
  4. Pulse a few times, then run continuously for 30-45 seconds until the mixture clumps together like wet sand. Scrape down sides if needed.
  5. If the mixture is too dry, add another teaspoon of honey or water. If too wet, add a tablespoon of oats.
  6. Take a tablespoon of the mixture and roll between palms to form a ball. If sticking, wet hands slightly.
  7. Roll about 20-24 bites and place on a plate or baking sheet lined with parchment paper.
  8. Chill in the fridge for at least 30 minutes for a firmer texture, or eat immediately.

Notes

Ensure dates are soft; if hard, soak in warm water for 10 minutes and drain well. Do not use instant or steel-cut oats. Store in the fridge for up to 2 weeks or freeze for up to 3 months. For nut allergies, substitute almonds with cashews or sunflower seed butter.
