  • 1.5 lbs bratwurst (mild pork, chicken, or turkey)
  • 2 large yellow onions, sliced into half-moons
  • 1 large green bell pepper, chopped into strips
  • 4 cloves garlic, minced
  • 1 cup light lager or pilsner (or chicken broth)
  • 2 tbsp Dijon mustard
  • 1 tbsp whole grain mustard
  • 1 tsp paprika (smoked or regular)
  • 1 tsp sugar
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Slice the onions and bell pepper. Mince the garlic.
  2. Heat butter in a large skillet over medium-high heat. Add bratwursts and sear for 2-3 minutes on each side until browned. Remove to a plate.
  3. In the same skillet, sauté onions and bell peppers over medium heat for 5-7 minutes until translucent and starting to brown. Add garlic and paprika in the last minute.
  4. Pour in beer (or broth) and scrape up browned bits from the bottom. Simmer for 2 minutes to reduce slightly.
  5. Stir in Dijon mustard, whole grain mustard, and sugar. Taste and adjust if needed.
  6. Return bratwursts to the skillet, nestling them into the sauce. Cover and simmer over medium-low heat for 10 minutes.
  7. Uncover and cook for 2 more minutes to thicken the sauce. Ensure internal temperature reaches 160°F.
  8. Remove from heat and let rest for 2 minutes before serving with pretzel rolls or crusty bread.

Notes

Do not rush the onions; cook them low and slow for sweetness. Use real butter for better flavor. If the sauce separates, whisk in a splash of cold water. For a vegetarian version, swap brats for plant-based sausages. For gluten-free, use GF beer/broth and serve with GF rolls.
