  • 2 large eggs, room temperature
  • 3/4 cup (150g) granulated sugar
  • 1 tsp vanilla extract
  • 1 cup (90g) finely ground almond flour
  • 1/2 cup (45g) unsweetened cocoa powder (Dutch-processed preferred)
  • 1/2 tsp fine sea salt
  • 1/2 cup (85g) dark chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly grease the parchment.
  2. Melt the butter in the microwave or saucepan and let it cool for about 5 minutes so it is liquid but not hot.
  3. In a large mixing bowl, whisk the eggs and granulated sugar vigorously for 3-4 minutes until the mixture is pale, thick, fluffy, and has doubled in volume.
  4. Stir in the melted butter and vanilla extract until just combined.
  5. Add the almond flour, cocoa powder, and salt. Gently fold these ingredients in with a spatula until just combined; do not overmix.
  6. If using, fold in the chocolate chips, reserving a few to sprinkle on top.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 25-30 minutes. The edges should be set and pulling away from the pan, but the center should still look slightly soft. A toothpick inserted into the center should come out with moist crumbs.
  9. Let the brownies cool in the pan for at least 30 minutes (preferably an hour) before cutting to allow the structure to set.

Notes

Whisking the eggs and sugar vigorously is crucial for creating the crackly top. Do not overbake, as brownies continue to cook in the pan after removal. For best results, let them cool completely before cutting to prevent crumbling. Almond flour must be finely ground; almond meal will result in a coarser texture.
