- 3 cups watermelon, cut into 1-inch cubes (seedless)
- 1 cup feta cheese, cut into 1-inch cubes
- 1/2 cup fresh mint leaves, roughly chopped
- 3 tbsp fresh squeezed lime juice
- 2 tbsp extra virgin olive oil
- 1 tbsp honey
- 1/4 tsp freshly ground black pepper
Instructions
- Soak wooden skewers in water for at least 30 minutes to prevent burning.
- Cut watermelon and feta cheese into uniform 1-inch cubes.
- Thread the skewers alternating between watermelon and feta cubes.
- In a small bowl, whisk together lime juice, olive oil, honey, chopped mint, and black pepper until emulsified.
- Preheat grill to medium-high heat.
- Place skewers on the grill perpendicular to the grates. Close lid and cook for 2-3 minutes until grill marks appear.
- Flip skewers and cook for another 1-2 minutes. Do not overcook to avoid mushy watermelon.
- Remove from grill and place on a serving platter.
- Drizzle the mint lime sauce over the warm skewers and serve immediately.
Notes
Soak wooden skewers for 30 minutes to prevent burning. Use room temperature feta for better texture. Ensure watermelon cubes are firm and uniform. The recipe is naturally gluten-free. For a spicy kick, add cayenne pepper to the drizzle.
