A creamy, hearty, and easy make-ahead breakfast that requires zero cooking. This chia pudding combines peanut butter, ripe bananas, and chia seeds for a nutritious and delicious start to your day.
Ingredients
- 1/2 cup (60g) chia seeds
- 2 cups (480ml) unsweetened vanilla almond milk
- 4 tablespoons (64g) natural creamy peanut butter
- 2 medium ripe bananas
- 1–2 tablespoons honey
- 1/2 teaspoon ground cinnamon
- 1 pinch salt
- Optional toppings: sliced bananas, crushed peanuts, dark chocolate chips, granola, toasted coconut flakes
Instructions
- Mash the ripe bananas in a large bowl or directly in the jars using a fork until smooth.
- Add the peanut butter, honey, cinnamon, and salt to the mashed bananas and mix well.
- Pour in the almond milk and stir until the peanut butter and honey are fully dissolved and the mixture is smooth.
- Sprinkle the chia seeds evenly over the mixture and stir vigorously for one minute to prevent clumping.
- Divide the mixture evenly among 4 mason jars or glass containers, leaving a little space at the top.
- Seal the lids tightly and refrigerate for at least 8 hours or overnight.
- Before serving, stir the pudding well to redistribute the creaminess.
- Top with desired toppings such as banana slices, crushed peanuts, or granola and serve cold.
Notes
For best texture, stir the mixture again 10 minutes after adding the chia seeds to prevent clumping. Use very ripe bananas for natural sweetness. If the pudding is too thick, add a splash of milk. If too thin, let it sit longer or add more chia seeds. This recipe is naturally gluten-free but ensure your peanut butter and chia seeds are certified gluten-free if necessary.
