Ingredients
- 12 oz (340g) semi-sweet or dark chocolate chips
- ½ cup (120ml) heavy cream
- ½ cup (120g) caramel sauce
- 2 tablespoons (30g) unsalted butter
- ½ teaspoon flaky sea salt
- ½ cup (50g) cocoa powder (for coating)
- ½ cup (50g) crushed pretzels (for coating)
- ¼ cup (30g) white chocolate chips, melted (for drizzling, optional)
- Optional: Crushed peppermint candies, chopped nuts, or desiccated coconut
Instructions
- Line a baking sheet with parchment paper and prepare shallow bowls with your chosen coatings (cocoa powder, crushed pretzels, etc.).
- Pour heavy cream and caramel sauce into a small saucepan. Heat over medium heat until it just begins to simmer with small bubbles around the edges. Remove from heat immediately.
- Pour the hot cream-caramel mixture over the chocolate chips in a heatproof bowl. Let sit for 5 minutes to soften the chocolate.
- Add the butter and flaky sea salt. Stir gently from the center outwards with a silicone spatula until the mixture is smooth, glossy, and thick.
- Cover the bowl with plastic wrap pressed directly onto the surface. Refrigerate for at least 2 hours, or until firm enough to scoop.
- Scoop portions of the chilled ganache using a small spoon or melon baller. Roll quickly between your palms to form smooth balls (yields about 24-30 truffles).
- Drop each ball into the coating of choice, tossing gently to cover completely. Place back on the parchment-lined sheet.
- If using white chocolate drizzle, melt chips in 15-second bursts and drizzle over the truffles.
- Refrigerate the finished truffles for another 30 minutes to set the coating before serving.
Notes
Do not rush the melting step; let the chocolate sit for 5 minutes before stirring to prevent a grainy texture. Keep hands cool and dry to prevent the ganache from melting while rolling. For best results, use high-quality chocolate chips or chopped chocolate bars. These truffles can be stored in the refrigerator for up to 2 weeks or frozen for up to 3 months.
