  • 3 pounds beef chuck roast, cut into 1.5-inch cubes
  • 1 can (12 oz / 355 ml) Guinness Draught stout
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 4 large carrots, peeled and chopped into 1-inch chunks
  • 1.5 pounds waxy potatoes (Yukon Gold or red), cut into bite-sized cubes
  • 1 cup low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 1 bay leaf
  • 2 tablespoons butter (for searing)
  • 2 tablespoons all-purpose flour (for coating beef)
  • Salt and black pepper, to taste

Instructions

  1. Pat the beef cubes dry with paper towels. If searing, toss the beef in flour, salt, and pepper.
  2. Heat butter in a large skillet over medium-high heat. Sear beef cubes in batches until browned on all sides (about 5 minutes per batch). Remove and set aside.
  3. Place the seared beef into the bottom of a 6-quart slow cooker.
  4. Add the diced onions, minced garlic, carrots, and potatoes on top of the beef.
  5. Pour in the Guinness, beef broth, Worcestershire sauce, and tomato paste. Sprinkle with dried thyme and add the bay leaf. Stir gently to combine.
  6. Cover and cook on LOW for 6 to 8 hours, until the beef is fork-tender.
  7. Remove the bay leaf. Taste and adjust seasoning with salt and pepper.
  8. If the sauce is too thin, mix 1 tablespoon cornstarch with 1 tablespoon cold water to create a slurry. Stir into the stew and cook on HIGH for 30 minutes to thicken.
  9. Serve hot, optionally topped with fresh parsley.

Notes

For best results, use waxy potatoes like Yukon Golds or red potatoes as they hold their shape better than russets. Searing the beef is optional but recommended for deeper flavor. This stew freezes well for up to 3 months and tastes even better the next day.
