Description

These soft overnight cinnamon rolls are a minimal-effort, make-ahead treat perfect for self-care. Using canned biscuits as a base, they require zero kneading and rise slowly in the fridge for a tender, gooey texture topped with cream cheese frosting.

  • 16 oz (450g) large flaky buttermilk biscuits (canned)
  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) dark brown sugar
  • 2 tbsp (12g) ground cinnamon
  • 1/2 cup (100g) granulated sugar
  • 4 oz (113g) full-fat block cream cheese, softened
  • 1 cup (120g) powdered sugar
  • 12 tbsp whole milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Separate the canned biscuits and flatten each one slightly to about 6-7 inches in diameter.
  3. Melt the butter and mix the brown sugar and cinnamon in a small bowl.
  4. Place flattened biscuits in the prepared dish. Brush each with melted butter, then sprinkle evenly with the cinnamon-sugar mixture.
  5. Gently press the edges of the biscuits together so they stick to their neighbors.
  6. Cover the dish tightly with plastic wrap and refrigerate for 8-12 hours (overnight).
  7. Remove from fridge and let sit on the counter for 20-30 minutes while preheating oven to 350°F (175°C).
  8. Bake for 20-25 minutes until golden brown and puffy.
  9. While baking, beat cream cheese until smooth. Add powdered sugar, vanilla, and 1 tbsp milk. Beat until creamy.
  10. Let baked rolls cool for 5 minutes, then spread frosting generously over the warm rolls. Serve immediately.

Notes

The overnight rest is non-negotiable for soft texture. Use full-fat block cream cheese for the frosting, not tubbed. Frost rolls while they are warm (5-10 minutes after baking) but not hot. Store leftovers in an airtight container at room temperature for 2 days, or freeze for up to 3 months.
