Ingredients
- 2 medium ripe avocados (about 1 cup / 230g flesh)
- 1/2 cup / 60g high-quality dark chocolate (70% or 85%), chopped
- 2 tablespoons / 10g unsweetened cocoa powder (Dutch-processed preferred)
- 1/4 to 1/2 cup / 60-120ml unsweetened almond milk or coconut milk
- 2–3 tablespoons / 30-45ml sweetener (maple syrup, erythritol, or monk fruit)
- 1 teaspoon / 5ml pure vanilla extract
- 1 pinch sea salt
- 1/2 teaspoon espresso powder (optional, for enhanced chocolate flavor)
Instructions
- Cut the avocados in half, remove the pits, and scoop the bright green flesh into a high-speed blender or food processor.
- Add the almond milk (start with 1/4 cup), vanilla extract, and sweetener to the blender. Pulse briefly to mix liquids with the avocado.
- Add the chopped dark chocolate, cocoa powder, and espresso powder (if using).
- Blend on high for 1-2 minutes, stopping to scrape down the sides with a spatula, until the mixture is completely smooth, glossy, and free of chunks.
- Taste the mixture and adjust sweetness, salt, or vanilla as needed. Add more milk 1 tablespoon at a time if the pudding is too thick.
- Transfer the pudding into serving glasses or a bowl. Cover and refrigerate for at least 30 minutes to set and meld flavors.
- Serve chilled, topped with whipped coconut cream, fresh berries, crushed nuts, or a sprinkle of sea salt.
Notes
Ensure avocados are very ripe for a smooth texture. Do not skip the blending time; thorough blending is key to removing any graininess. The pudding will thicken in the fridge. If it becomes too thick upon storage, stir in a splash of almond milk to loosen it. Can be stored in the fridge for up to 3 days.
