- 10–12 large fresh mint leaves
- 1 large lime, cut in half
- 1–2 teaspoons granulated white sugar OR 1 tablespoon simple syrup
- 1 cup (240ml) chilled soda water
- Ice (cubed or crushed)
- Lemon wedges (optional, for garnish)
Instructions
- Wash and pat dry the mint leaves. Cut limes in half and measure out sugar or simple syrup.
- Place mint leaves in the bottom of a highball glass. Sprinkle sugar (or simple syrup) over the leaves.
- Gently muddle the mint and sugar to bruise the leaves and release oils, being careful not to shred them into a paste.
- Squeeze the juice of half a lime into the glass (about 1-2 tablespoons). Stir gently to help dissolve the sugar.
- Fill the glass to the top with ice.
- Pour chilled soda water over the ice, leaving a little space at the top.
- Gently stir to combine ingredients without losing carbonation.
- Garnish with a sprig of fresh mint (lightly slapped to release aroma) and a lime wedge.
Notes
Use fresh mint only; dried mint lacks flavor. Do not over-muddle mint as it can become bitter. Ensure soda water is well-chilled to maintain fizz. For parties, batch the mint, lime, and sugar mixture in a pitcher, but add soda water and ice just before serving to prevent flatness.
