  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • ½ cup chicken or turkey broth (low-sodium, compliant)
  • 1 large fresh lemon (half juiced, half stuffed)
  • 4 fresh garlic cloves, smashed
  • 1 sprig fresh thyme (optional)
  • 1 sprig fresh rosemary (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Let turkey breast sit at room temperature for 15-20 minutes and pat dry with paper towels.
  2. In a small bowl, mix garlic powder, dried thyme, dried rosemary, dried oregano, onion powder, sea salt, and black pepper to create the herb rub.
  3. Drizzle olive oil or melted ghee over the turkey breast and rub it in to coat the entire surface.
  4. Sprinkle the herb rub generously over the turkey, pressing it into the meat to adhere.
  5. Stuff the cavity with smashed garlic cloves, half the lemon, and optional fresh herb sprigs. If no cavity, place lemon and garlic on top.
  6. Place turkey on a rimmed baking sheet or in a roasting pan. Pour broth into the bottom of the pan.
  7. Roast for 25-30 minutes, or until internal temperature reaches 165°F (74°C). Check temperature at the 25-minute mark.
  8. Remove from oven and transfer to a cutting board. Tent loosely with foil and rest for at least 10 minutes.
  9. Slice against the grain into ½-inch slices and serve, drizzling with pan juices.

Notes

Ensure turkey reaches 165°F internal temperature. Do not overcook as turkey breast is lean and dries out easily. Resting for 10 minutes is crucial for juiciness. For a pan sauce, simmer pan juices with a splash of water or broth after removing turkey.
