Ingredients
- 4 large ripe peaches (about 1.5 lbs), peeled and sliced into ½-inch chunks
- 1.5 cups fresh blackberries (200g)
- ½ cup granulated sugar (100g)
- 1 tablespoon lemon juice (15ml)
- 2 tablespoons cornstarch (15g)
- 1 teaspoon cinnamon
- 1 cup all-purpose flour (125g)
- 1 tablespoon baking powder (10g)
- ½ teaspoon salt (3g)
- ¾ cup whole milk (180ml)
- ½ cup melted unsalted butter (115g)
- 1 teaspoon vanilla extract (5ml)
- 2 tablespoons extra butter, for dotting
- 1 tablespoon coarse sugar, optional for topping
Instructions
- Preheat oven to 375°F (190°C). Place a 10-inch cast iron skillet in the oven to preheat.
- In a large bowl, toss sliced peaches and blackberries with sugar, lemon juice, cornstarch, and cinnamon. Set aside.
- In a separate bowl, whisk together flour, baking powder, and salt.
- In a small bowl or measuring cup, combine milk, melted butter, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir gently until just combined. Do not overmix; lumps are okay.
- Carefully remove the hot skillet from the oven. Pour the fruit mixture into the skillet.
- Drop spoonfuls of the batter over the fruit. Do not spread it smooth. Dot the top with 2 tablespoons of butter.
- Bake for 40-45 minutes until the crust is deep golden brown and fruit is bubbling. If browning too fast, cover loosely with foil.
- Remove from oven and let cool for at least 15 minutes to allow filling to set.
- Serve warm with ice cream or whipped cream.
