  • 1 can (14oz / 397g) sweetened condensed milk
  • 1 to 2 teaspoons peppermint extract
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 cup (150g) mini semi-sweet chocolate chips
  • Optional: 1/4 cup crushed peppermint candies
  • Optional: Chocolate sauce for drizzling

Instructions

  1. Line an 8×4 inch loaf pan with parchment paper or plastic wrap, leaving an overhang on the long sides for easy removal.
  2. Pour cold heavy whipping cream into a large mixing bowl. Whip on medium speed until soft peaks form (about 2-3 minutes with an electric mixer). Do not over-whip.
  3. In a separate small bowl, whisk together the sweetened condensed milk, peppermint extract, vanilla extract, and salt until smooth.
  4. Pour the condensed milk mixture into the whipped cream. Gently fold together using a silicone spatula until uniform in color with no streaks, taking care to keep the air in the mixture.
  5. Stir in the mini chocolate chips. If using crushed peppermint candies or chocolate sauce swirls, fold them in gently now.
  6. Spread the mixture evenly into the prepared loaf pan. Cover tightly with plastic wrap or a lid.
  7. Freeze for at least 6 hours, preferably overnight, until firm.
  8. To serve, lift the ice cream out of the pan using the parchment overhang. Let it sit at room temperature for 5-10 minutes to soften slightly before scooping.
